Four-Ingredient Banana, Peanut Butter & Blueberry Muffins
Share
Four ingredients and one mixing bowl make these muffins a simple option for breakfast or a snack. Mashed bananas and peanut butter form the base, eggs hold it together, and blueberries add little bursts of sweetness. This flourless recipe makes six full-size muffins or 24 mini muffins.
We tried the mini version in our kitchen, and they tasted great, leaving us wanting another. A note on flavor: Banana is the most prominent flavor, so expect a banana muffin with blueberries rather than a traditional blueberry muffin.

Our recipe review
Ease: 5/5. Four ingredients, one bowl, and no special equipment make this a straightforward recipe. Mashing, mixing, and filling the muffin cups are the main tasks.
Healthier: 3/5. Peanut butter and eggs contribute protein, while bananas and blueberries provide fruit. Choosing peanut butter without added sugar keeps the recipe free of added sugar. The recipe contains a full cup of peanut butter, so portion size still matters. The mini version offers a smaller serving, with four minis equivalent to one full-size muffin.
Speed: 3/5 for full-size muffins; 4/5 for minis. Allow about 5–10 minutes for preparation, followed by baking and a few minutes of cooling. Full-size muffins take roughly 40–45 minutes overall. The mini version can be ready in about 20–25 minutes if all 24 fit in the oven at once.
Taste: We enjoyed the mini muffins and found ourselves wanting more. Banana leads the flavor, with peanut butter and blueberries rounding out the recipe. If you’re expecting a traditional blueberry muffin, that strong banana flavor is worth knowing about before you bake.
Review basis: We made and tasted the mini muffin version in our kitchen, yielding 24 mini muffins with a 10-minute bake at 350°F. The six-muffin yield and 30-minute baking time for full-size muffins come from the original video. Prep, cooling, and total times are estimates.
